Menu Suggestions: 

Classic Celebration Supper

 

Hors d'Oeuvres:

  *Baked brie topped with locally made chipotle raspberry sauce garnished
       with fresh strawberries, accompanied by crackers and sliced baguette basket
 
Buffet:

  *Mixed organic field greens with caramelized pecans, petite heirloom tomatoes,
        shredded parmesan cheese and a creamy herb vinaigrette

   *Roast pork tenderloin medallions with a Dijon rosemary herb crust garnished 
        with fresh rosemary branches
      
   *Yukon gold mashed potatoes with sour cream and fresh snipped chive sauce
      
   *French green beans in a blood orange reduction butter sauce topped with
        sliced toasted almonds

   *Roasted winter vegetables including sweet potatoes, yellow and orange

        carrots, baby new potatoes with roasted garlic dressed in a herb,
        olive oil and sea salt topping

   *Bountiful baskets of assorted dinner rolls, served with sweet butter

 

 

Mediterranean Buffet Feast

Hors d'Oeuvres:

  *Spanokopita - Spinach and cheese in toasted triangles of phyllo dough, passed
      to your guests, fresh from the oven

  *Bruschetta, - caramelized shallots with fresh pear slices and gorgonzola crumbles
                         - pesto, local goat cheese and basil chiffonade
                         - prosciutto with fontina and sun-dried tomatoes

Buffet:

  *Large organic mixed field green salad topped with local goat cheese,
      caramelized Texas pecans, petite heirloom tomatoes and creamy miso vinaigrette

  *Lamb and beef gyro platters beautifully garnished and surrounded by
      fresh pita triangles

  *Main course accompanied by roasted new potatoes and baby spring veggies,
      wedged sweet potatoes, eggplant, baby carrots, fresh summer squashes,
      dressed in herbs de provence and garnished with rosemary branches,
      served warm

  *Handmade spicy falafel bites, served warm from the oven, accompanied by
      their own special roasted garlic dipping sauce.

  *Herb orzo pasta salad – with fresh vegetables and Mediterranean olives in
      a creamy lemon dressing.  (grilled shrimp or chicken could be added to this dish
      if you wish )

Accompanied by:

  *Tzatziki sauce – handmade yogurt cucumber dressing

  *Handmade pesto hummus – my specialty

  *Baskets of fresh dinner rolls, pita bread, nan bread, olive oil for dipping,
      as well as butter
 
  *Baklava platter with fresh fruit makes a wonderful finish to this buffet

This buffet can be served entirely vegetarian as well as gluten free or vegan

Gourmet Pizza Buffet

Starters:

 

* Mixed field greens with caramelized pecans, petite tomatoes, shredded
      parmesan cheese, and a creamy herb vinaigrette

                                                 or perhaps...

* Antipasti platter selection - Prosciutto, black forest ham, mozzarella,
                                                       Mediterranean olives and artichoke hearts
                                                - A second vegetarian selection with pecorino,
                                                       mozzarella, grilled summer vegetables, sliced    
                                                       tomatoes, olives and roasted eggplant

 

Buffet:

* Warm focaccia pizza slices served fresh from the oven, passed to your guests

    Handmade pesto with vegetable medley and mozzarella

    Southwest chicken with Hatch chiles and pepperjack cheese

    Elgin beef sausage with sweet roasted bell peppers and sharp cheddar

    Three cheese, marinara sauce with fresh herbs

      Pizza Bianca with white alfredo sauce, wild mushroom medley, drizzled with
       truffle oil and three cheeses

      Classic pepperoni with mozzarella and jack cheese

 

Classic “Tex-Mex” Buffet

 

Starter suggestions:

* Tequila lime butter shrimp and fresh roasted corn off the cob appetizers in a
     mini-flour tortilla shell to be passed by the staff

* Appetizer buffet with salsa and chips bar… bowls of fresh white,
    yellow and blue corn tortilla chips accompanied by three mild and
    medium salsa choices and fresh made guacamole and sour cream dips
    including our spicy white queso with roasted chilis

* Mexican Caesar salad with queso blanco, toasted pepitas, cherry tomatoes and
    cornbread croutons. Texas ranch to accompany

 

Buffet suggestions:

   * Southwestern chicken breast, baked with roasted red and
      green bell peppers and mild Hatch chiles

                                             or

   * Traditional grilled chicken and beef fajitas with grilled onions, sliced peppers,
        served with corn and flour tortillas

 

* Fresh grilled quesadillas - made to order with grilled shrimp or three cheese
    topped with salsa verde and sour cream.

* Classic pinto beans or vegetarian black beans

* All sides included - grated cheese, sour cream, salsas, and jalapenos

* Pralines and strawberries make a nice finish to this classic Texas buffet

Salad Buffet
Perfect for a summer lunch buffet

 

  Please choose 4 or 5 from the following for a sumptuous salad sampler...

 
  *Classic chicken breast salad poached in white wine with tarragon lemon
       mayonnaise, toasted pecans, fresh herbs and a touch of minced shallots
 
  *Thai style soba noodles with grilled shrimp, snow peas, fresh veggies with
       a satay peanut dressing topped with toasted black sesame seeds and sliced
       cucumber

   *French white bean salad with shredded chicken breast, artichoke hearts and
       garlic aioli drizzled with white truffle oil

  *Pasta primavera salad - penne pasta, tossed with fresh vegetable medley in
       a shallot  pesto dressing topped with shaved parmesan (vegetarian)

  *Mixed field greens with caramelized pecans, petite tomatoes, shredded
       parmesan cheese, and a creamy herb vinaigrette

  *Herb orzo pasta salad – with fresh vegetables and Mediterranean olives in
      a creamy lemon dressing.  (grilled shrimp could be added to this dish if you
      wish)

  *Fresh fruit salad platter – melons, strawberries, pineapple and many other
        fresh berries and fruits.  Can also include my famous nutella brownies

  *Pesto pasta salad with handmade pesto, grilled veggies, toasted pine nuts and
       pecorino shavings

  *Baby spinach and bacon salad – fresh mushrooms, hard boiled free range eggs,
      crumbled bacon and bleu cheese, dressed in a balsamic vinaigrette

  *Baskets of assorted dinner rolls and sour dough French bread,
